Classic Spaghetti Carbonara

Ingredients
400g spaghetti
150g pancetta
2 count large egg
1 cup grated Parmesan cheese
2 clove minced garlic
salt
freshly ground black pepper
fresh, chopped parsley (optional)
Instructions
- Step 1: Cook spaghetti in a large pot of salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
- Step 2: In a pan, cook pancetta over medium heat until crispy. Add garlic and sauté for 1 minute.
- Step 3: In a bowl, whisk eggs and Parmesan together.
- Step 4: Add drained spaghetti to the pan with pancetta. Remove from heat.
- Step 5: Quickly pour egg mixture over pasta, tossing rapidly to coat (add reserved pasta water as needed for creaminess).
- Step 6: Season with salt and plenty of black pepper. Garnish with parsley and extra cheese.
