Classic Spaghetti Carbonara

Ingredients

  • 400g spaghetti
  • 150g pancetta
  • 2 count large egg
  • 1 cup grated Parmesan cheese
  • 2 clove minced garlic
  • salt
  • freshly ground black pepper
  • fresh, chopped parsley (optional)

Instructions

  1. Step 1: Cook spaghetti in a large pot of salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Step 2: In a pan, cook pancetta over medium heat until crispy. Add garlic and sauté for 1 minute.
  3. Step 3: In a bowl, whisk eggs and Parmesan together.
  4. Step 4: Add drained spaghetti to the pan with pancetta. Remove from heat.
  5. Step 5: Quickly pour egg mixture over pasta, tossing rapidly to coat (add reserved pasta water as needed for creaminess).
  6. Step 6: Season with salt and plenty of black pepper. Garnish with parsley and extra cheese.
